TOMMY CHU
Born in Hong Kong, Tommy discovered his passion for wine while working at Nobu Hong Kong, progressing from floor staff to Junior Sommelier. After completing his Wine Scholar Guild certifications in French and Italian wines in 2024, he joined MONO. There, he curates an organic and biodynamic wine list that is both obsessive and engaging—juxtaposing Beaujolais Cru growers with rare Madeira, everyday Lambrusco, and small European producers.
He is particularly proud of his dynamic by-the-glass program, updated weekly, and his educational "5-Glass Burgundy" flights, which have introduced countless guests to Jura's oxidative whites and Sicily's volcanic reds.
Off-duty, Tommy travels to international wine fairs to discover under-the-radar producers. He is dedicated to fostering a deeper understanding of organic wines and their place in the global market.
